What's for dinner? Meatless Monday

On occasion, we have a meatless Monday meal for dinner to save money (meat is usually the most expensive portion of the meal.)  Tonight, since Tyler is taking the youth from Central Community Church on a mission trip, I went easy-peasy and did the classic Mac and Cheese.
Below is my super frugal recipe:




1/2 box of Ronzoni Heart Smart Pasta, cooked al dente (free... thanks Kroger mega sale)
1/2 block of white cheddar cheese (1.07 for half block)
1/2 cup of skim milk (approx 60 cents)
Splash of water
Grated Parmesan from left over pizza box

Cook pasta.  Drain, leaving approx 1/4 cup water in stockpot.  While water is boiling cube pieces of cheese.  Place cubes of cheese in pasta.  Stir in milk and water.  Stir until smooth and cheese is melted.  Place in individual serving bowls and let the kiddos top with parmesan!

Dinner is served in about 12 minutes!  To the tune of under $2... and with just me and the girls eating tonight, I will have leftovers for lunch tomorrow!

Hello World!

Hey everyone!  I have tried on and off throughout the years to maintain a blog, but I am not very good at keeping it updated.  However, my sister, Lyndsey moved to Georgia today to begin her journey at Georgia Southern University.  I figured this would be a great way to keep her (and other friends and family we don't see very often) clued into our everyday lives.  So check back often for updates and ramblings of my sweet little family!
